Strawberry Fraisier Class


Our dessert based classes are new for 2024, and we are so pleased to introduce our strawberry fraisier class! During this class we will be digging deeper into some more advanced patisserie based skills. Learn how to make the perfect 6inch strawberry fraisier cake, lovely to be used as a birthday cake or a dinner party dessert to wow your guests with!

This class is spilt over two days to allow the fraisier to set overnight before de-moulding and finishing the following morning. We include chocolate tempering in this course to help you create beautiful tempered chocolate curls to use as decoration.

We start the class with a choice of Cafetiere coffee or tea with complimentary macarons to get your creative juices flowing!

Day one 3:30PM start (duration 1.5- 2 hours)

Day two 10AM start (duration 1.5- 2 hours)

Class includes:

  • Learning how to make pastry cream that becomes vanilla diplomat
  • Learning how to fill and assemble a 6inch fraisier cake (the vanilla sponge is baked before hand but the recipe is included in your pack)
  • Learning how to portion and arrange strawberries
  • Learning how to make strawberry jelly for the fraisier topping
  • Learning how to effectively glaze a fraisier
  • Learning how to make our white chocolate whipped ganache
  • Learning how to temper dark chocolate
  • Learning how to make chocolate curls from the tempered chocolate
  • Learning how to decorate a strawberry fraisier and learn piping techniques
  • Taking all the recipes away with you to try at home
  • Take home everything you make
  • Taking home a branded Pure Patisserie wooden spoon to further your baking journey!

Class includes the use of  EGG, MILK, SOYA, GLUTEN (please inform us of any allergies before booking)
