Chocolate praline mousse cake class


This is the first addition of dessert based classes to be held at Pure Patisserie, brand new for 2024, we are pleased to introduce our mousse cake class! During this class we will be digging deeper into some more advanced patisserie based skills. Learn how to make the perfect glazed mousse entremet, trust us, we promise it will wow all your guests at dinner parties by looks and taste.

This class is spilt over two days to allow the mousse to set overnight before glazing and finishing the following morning. We include chocolate tempering in this course to help you create beautiful tempered chocolate curls to use as decoration.

We start the class with a choice of Cafetiere coffee or tea with complimentary macarons to get your creative juices flowing!

Day one 3:30PM start (duration 2-2.5 hours)

Day two 10AM start (duration 2-3 hours)

  • Learning how to make and roll our praline feulletine base
  • Learning how to make our dark chocolate mousse recipe
  • Learning how to fill and assemble a 6inch mousse cake (we have a salted caramel and chocolate fudge cake middle which is prepared before hand for you to add to the centre of your cake- recipe is included in your pack)
  • Learning how to make our chocolate mirror glaze
  • Learning how to effectively glaze a mousse cake
  • Learning how to make our white chocolate whipped ganache
  • Learning how to temper dark chocolate
  • Learning how to make chocolate curls from the tempered chocolate
  • Learning how to decorate a mousse cake, with rochers and piping techniques
  • Taking all the recipes away with you to try at home
  • Take home everything you make
  • Taking home a branded Pure Patisserie wooden spoon to further your baking journey!

Class includes the use of  EGG, MILK, SOYA, GLUTEN, NUTS (please inform us of any allergies before booking)
